Soyrizo Breakfast Tacos


  • Olive oil
  • 1/4 package of Soyrizo
  • 1/4 to 1/2 cup Just Egg or 2 regular eggs
  • 3 Corn Tortillas
  • 1/2 Avocado
  • 1 small Tomato
  • Sliced Onion


Heat olive oil in skillet/pan over medium heat. Add soyrizo (I use about 1/4 of the package) to the pan and cook until slightly crispy, then add just egg (or regular eggs) and cook throughly. Set aside.

Warm tortillas over a flame or in a pan, then divide egg and soyrizo mixture evenly between the three tortillas.

Top with sliced avocado, tomato and onion.
